I'd have to say, some of the greatest video game music compositions have been found in Mario games. Super Mario RPG, World, and 64, to name a few.

What are your favorite pieces? Post your favorite Mario composers, too, if you want.

Cheese Land from Mario Kart Super Circuit. Composers are apparently Kenichi Nishimaki, Masanobu Matsunaga and Minako Hamano, so who knows which one wrote it.
That was a joke.

I liked most of the music in Super Paper Mario, but here are a few of my favorites:

"The Ultimate Show"
"Sammer's Kingdom"
"Lineland Road"
"I'm Not Nice"
"Castle Bleck"
"Flipside"

Paper Mario: The Thousand-Year Door: Battle Theme, first and third of the battle themes for the final boss, Super Bowser World 1, X-Naut Fortress, Doopliss' battle theme, Shadow Sirens' battle theme, etc. etc...
Super Paper Mario had some excellent music. I liked World 3's background music a lot. The Super Smash Bros. Melee version of the SMB3 music can rock one's socks, too.

Hey, uh... anybody know where I could get some PM:TTYD tracks WITHOUT sound effects? I found a couple of sources with fair MP3s, but things like the curtain rising before the battle's start or the sound made when a character speaks weren't removed... you can hear the Paragoomba's wings flapping in the battle theme MP3...
All your dreeeeeeams begiiin to shatterrrrrr~

Super Mario RPG carries my favorite compositions. The Finale, Forest Maze, Smithy's Theme... I could go on and on. The only SNES game that beats SMRPG in music, in my opinion, is Chrono Trigger. :)

Any star music for any game.
Um... TTYD battle, uh, SMW, SMRPG, waaaaaaaaay too much to list.
And the NES Contra forest song and that "base" song right after it or whatever. I like Maniac Mansion's song.... uh with the main guy I think it is.
Formerly quite reasonable.

The music from PM:TTYD RAWKED! The themes from Doopliss, Shadow Sirens, Crump, Grubba, and mini bosses all were awesome, but my fave was the Doopliss theme :)
Just because you can, doesn't mean you should.

I liked the music for TTYD's menu and a few other things, but overall, it was not the best.

I also like the majority of music from Mario Kart 64, especially the credits. I miss the time when all music for credits was epic and not jazzy or boring. Which isn't to say that music for credits is always like that now, but it doesn't seem as common.
