But you also have to ask yourself if those beliefs are worth having. Religion is more than just a taste as opposed to liking Mario games.

Many people do and come to the conclusion that they are. Not everyone is some brainwashed fool who can't think for themselves and is waiting for you to liberate them from the dangerous and oppressive threat of Religion.

Even saying that, supposing that attempting to get people to reevaluate their beliefs (every time the topic comes up) was actually your intention, then don't you think calling it "nonsense" or another derogatory word is much less effective than respectfully explaining your point?

Also, I wish you and your family my best. Going through something like that is never easy, and hope you can have as much time with him as possible.

And if it were once or twice, I wouldn't (haven't, in fact) have said anything. But almost every single time he mentions the topic, and that is often, it's in a manner similar to this.

I don't want to sit here and cry about it, because I'm not personally offended, but I do get tired of it.

But that goes back to LD's original statement, right? If you haven't done enough research to be able to discuss it, how could you possibly know enough to have come to an internal conclusion without having a double standard? I'm not out to get you here, it's just that you're dancing around the original point.
