In Kirby and the Amazing Mirror, how do you break those tiny gray blocks? I've tried everything and can't make a dent!

You can't break the gray blocks, but you can move them out of your way by just using Kirby's super inhale abilty. For the larger gray blocks call the other Kirbys and use super inhale togther.

The blocks I'm refering to are the gray blocks without stars in the middle of them and I've already tried to inhale those

Try using some strong abilities on them, such as Hammer, Burning, Stone, Missile, etc. Experiment with different abilities.

Wheel doesn't work on them in this game, even though it does in NiDL. UFO and Throw work, though, and possibly others of which I haven't thought.
