I have a quick question about Mario Galaxy. In order to collect all 120 stars, will I need to collect 100 coins in each level?

Not in the traditional sense, no. So there's no need to go questing after the scant coins that most of the levels provide.
However, things become a bit more clear once you've beaten the game.

So wait...it's not possible to beat the game with 120 stars? In other words, I need to beat the game with less than 120 stars and then go after the coins (or whatever it may be), correct?

You can get every star before seeing the credits, I'm pretty sure.
To answer your question less vaguely than Fifth, the 100 coin challenges are specifically assigned stages, and not just do-it-anytime sort of things.

No, I don't think so. The purple comets don't appear until you beat the game.

Even if it weren't for the Purple Comets, you still wouldn't be able to get all the stars before seeing the credits. The Grand Finale Galaxy is only accessible after getting all 120 stars as both Mario and Luigi.
