That's really cool! Nice find!
The Mario series is the best! It has every genre in video games but RTS'! It also has a plumber who does different roles, a princess, and a lot of odd creatures who don't seem to poop!

Seriously though, awesome ice cream truck. The only thing I'd be concerned about are the available flavors, because naturally I'd want something resembling a Mario character I like.

My ideas for flavors:

Mario - Cherry garcia
Luigi - Mint or sherbet
Peach - Strawberry. If bubble gum ice cream exists, then that too.
Toad - Vanilla or peppermint
Yoshi - Vanilla and mint or mint chocolate
Wario - Butterscotch
Donkey Kong - Chocolate
Bowser - Rocky road
Kamek - Raspberry or blueberry or whatever the blue flavor is

It does (though you don't see it too much these days, probably because of all the kids who ate the gum), and stellar ideas there!

For a brief while, I thought maybe that video (I haven't watched it) would be some sort of Van Halen-related Mario thing...

Well, yeah... I could've sworn I've had peach ice cream before, but I don't think I've seen it in some time. Then again, I haven't looked.
