My vote goes to Birdo (SMB2US). Birdo's a very admirable character in my eyes.

Such a strange and unique fight... the only issue was that you can't fight the boss again until you complete the game.

Does it have anything to do with how it turns into one of the scariest-looking bosses of all time once you've almost defeated it? I won't be able to forget that face, no matter how much I want to.

Haha, that only adds to its utter domination in the 'unique' department. Seeing such a cute purple creature turn into a violet-coloured psychopath is something no Mario game could emulate.
