I like the Space Rabbit chases from Galaxy, if those count. Plus I like the Time races in Yoshi's Story where you have to get the finish line to get the melons.

I have a nomination for a category, Bird Person. Best Non-Bowser Villain. I bet that would invoke some interesting discussions.
